Tyler and I have officially been eating on a paleo diet for the last 2 weeks and the effects of switching to this lifestyle have become apparent almost immediately. The absolute first thing I noticed was the bloat was gone! Honestly, I just feel good. I am learning little by little that eating this way can be absolutely delicious.
Another fun fact: the days of “running out quickly to the grocery store for a few things” are long behind me. There is nothing “quick” about going out with a little one. Thank the Lord above for Amazon Prime. That is where I found the Bob’s Red Mill Coconut Flour. I had never cooked with coconut flour before but read great things about the taste. Here’s what you need to start cooking!
1 teaspoon of coconut oil
1/4 cup of coconut flour + 2 Tablespoons
1/4 teaspoon of baking soda
1/4 cup of unsweetened vanilla almond milk
2 eggs
2 tablespoons of natural creamy almond butter
1/2 tablespoon of honey
1/2 ripe banana, mashed
Blueberry Topping
1/2 tablespoon pure maple syrup
1/2 cup fresh blueberries (I used frozen, whoops)
Pancakes
Melt 1 teaspoon of coconut oil in a large griddle over low-medium heat
In a large bowl, whisk together coconut flour & baking soda
In another bowl, mix together the eggs, banana, almond butter, almond milk, & honey
Add the wet ingredients to the flour and baking soda. Mix these together until you have a thick batter
NOW! This is important. Because you are essentially cooking with gluten-free flour, these things can be hard to flip. My advice? The smaller the pancake the easier to flip.
Pour 3 to 3 1/2 tablespoons at a time onto the griddle for one pancake. You’ll know your getting close to time to flip them once you see the top start to bubble a bit. Be patient and don’t rush, I am telling you they can be hard to flip but it is so worth it! They are delicious.
Blueberry Sauce:
Melt the syrup and blueberries in a small sauce pan until everything starts to bubble. Let the Blueberries reduce and serve them over the pancakes.
